SANE-TATSU Knives: Yanagi-ba
Yanagi ba knives are an essential knife in the traditional Japanese kitchen. Mainly used for sushi and sashimi, this knife requires a sharp and thin blade. The Yanagi ba knife is forged especially with certain conditions to meet the requirements to make beautifully clean, smooth cuts when cutting fish. Down to the small cross-sections on a microscopic level.
Hand-made in Japan.
Blade material: Yasugi Steel.
What is Yasugi Steel? Yasugi steel comes from the Japanese border region of Kyukumohaku and made used specific techniques, including heat resistant materials.
Please note that the steel is not stainless like usual traditional pro Japanese kitchen knives and to prevent rust we recommend to immediately dry them off after cleaning.
